-1 bunch kale
-3/4 cup cranberries
-1/2 cup almonds
-1 tbsp olive oil or coconut oil
-Salt and pepper to taste
-fresh lemon (1/2 wedge)
1. Steam kale until bright green and crunchy, NOT wilty (should take about 5 minutes on medium-high).
2. In the meantime, in a skillet heat up some EVOO or CO and toast almonds for 3 minutes. Keep an eye on them so they don't burn!! (I burned mine a little-- if they start popping, that's your sign).
3. Once done steaming, put kale in a bowl and top with the almonds and extra oil leftover.
4. Add your cranberries, salt, pepper, lemon, and extra EVOO if needed.
5. Toss and serve. YUM!
