Anyways, here is how I spiced up my vegetable side to dinner last night and made it super yummy:
-2 cups spinach
-2 cups baby kales
-1 cup broccoli
-1 tbsp coconut butter (this adds some sweet, fatty texture. If you don't like coconut you can add your fav oil, whether EVOO or macadamia)
-1 cup of Eden's Organic sauerkraut
-The juice of one lemon
- sea salt and pepper, to taste
1. First you need to cook the vegetables. I recommend steaming them (it brings them out crunchy and perfectly moist). If you don't have a steamer, I would invest in one. If not, you can boil your vegetables.
2. Once cooked, add your vegetables to a bowl. Add in coconut butter until it is melted (if it too little, feel free to add more to taste!). Then add lemon, salt, and pepper. Mix well.
3. Finally top off the veggies with sauerkraut and enjoy.
