-Lots of coconut oil
-Pecans (if you want)
-Coconut milk (optional)
Stab your sweet potato with a fork and stick in oven on 420 degrees for about 35 minutes (or until soft). In the mean time chill your jar of coconut oil in the fridge. Once the sweet potato is done add desired amounts of "flakes" of frozen coconut oil, a few dashes of cinnamon, and a handful of pecans-- delicious! (Also tastes great with a cold sweet potato).
Preparation #2 (takes longer):
Bring a pot to boil. Skin the potatoes and chop into cubes and add in to boiling water. Should become tender after 30 minutes. Once this is done put the potatoes in a bowl and add in half a cup of coconut milk or enough to keep the mixture thick. Mash together and add in cinnamon and pecans. Continue mashing and crush the pecans inside the mixture. Once this is finished, top it off with the "flakes" of frozen coconut oil. Super healthy mashed potatoes!
