Imam is originally a Turkish dish that the Greeks took and modified long long ago. The name comes from a tale that a muslim priest (imam) upon seeing the dish prepared fainted because it looked so delicious and the oil used was so rich. I just about faint too whenever I order this food in Greece! It is delicious and makes the eggplant taste creamy. Here's the recipe:
This dish is easy to make and tastes delicious. It is even better if you make your own tomato sauce instead of using canned. Here in Greece the tomatoes are so juicy so of course we had to use them for the sauce. Here's what you need to do to make this simple dish:
This yogurt sauce pairs perfectly with the meatballs I have in my recipes, any type of grilled meat (chicken or beef), and even spread on raw vegetables. Enjoy, but warning don't eat if your significant other gets bothered by garlic breath :)!
-2 red and ripe organic tomatoes, cut into wedges
-1 cucumber, sliced
-1/4 sweet red onion chopped finely
-2 tbsp EVOO
-1/2 cup of kalamata olives
-1 green bell pepper, sliced and chopped into square pieces
-Oregano, and sea salt, and pepper to taste
-1/4 cup of feta cheese
-A handful of raw green beans, chopped in half
-1/4 cup red wine vinegar
This recipe is so delicious as all Greek food is for me! You take a few in a bag for a snack or make it a part of your lunch couple with a salad and some vegetables. It pairs really well with some tzatziki (greek yogurt sauce). Whatever way you eat it, how could you not enjoy some good ol' meatballs?!
This dish is really yummy in the summer. It uses in season vegetables like zucchini, summer squash, and eggplant and is one of my favorite comfort foods. It makes a great addition to a side of meat or fish, or even alone. Here's the recipe...
This is super simple, highly nutritious, and extremely delicious. Animals bones contain important nutrients that are nowadays neglected in our diets and difficult to obtain except from a few specific sources. So whether you are feeling a cold coming on or you are too lazy to put together a whole meal, this bone broth is highly valuable. Oh and in case I forgot to mention this, you need a slow cooker for this preparation!
Yummy and simple, make this fudge in 1 minute with 2 meager ingredients!
-3 tbsp raw Cacao powder
-3 teaspoons of Coconut oil
-1 date, pitted and crushed as fiercely as possible with your hand--> doesn't have to be perfect, I like the date a little crunchy
*Optional: 2 tsp honey
1. Throw the ingredients in a tiny bowl.
2. Grab a spoon and take the bowl back to your TV.
3. Mix it together while you're watching TV because it takes a couple minutes to mix properly, especially if your coconut oil is hard. It'll look really dry at first, but don't add any extra anything. Just go with my measurements and mix it together slowly and carefully with a spoon. Within a minute you'll get the texture seen in my above pic.
