I preheated the oven to 400 F.
With a spoon I scooped out the seeds and stringy meat-- but DO NOT throw the seeds away. For an idea, click here!
I placed my squash upright in a baking pan.
Then I filled the pan with about an inch of water.
Then I sprinkled generous amounts of cinnamon, nutmeg, and a bit of salt.
I placed some aluminum foil to cover the pan.
Then I cooked for 30 minutes or until a fork could easily pierce the center.
When finished, I split one with my brother and we just scooped the innards out of the squash.
The rest I let cool, then I scooped out the meat easily, mashed it all in a bowl, and stuck it in the fridge for part of my lunch the next day! And yes, everyone was drooling when they saw what I had in my lunch bag!
