-3 slices of paleo bread (also see my nut-free version)
-1/3 cup lite coconut milk
-1 tsp cinnamon, nutmeg, and vanilla extract
-1 tbsp coconut oil
-1 banana, cut in half, and sliced
-Maple syrup or raw honey, for drizzling
1. In a circular dish, mix together egg, coconut milk, and spices.
2. Heat up a skillet on high with coconut oil. In the meantime, place your 3 pieces of paleo bread in the circular dish, about 30 seconds on each side to soak up the french toast batter.
4. Once coconut oil is melted, reduce to medium heat, and add first slice of bread cooking about 1.5 minutes on each side. Press down with the spatula a couple of times so the bread really soaks in the batter.
6. Once all the bread is cooked, place your banana in the pan and cook on one side for about 3 minutes or until "carmelized".
