-16 ounces of brussel sprouts, cleaned and trimmed in halves
-16 ounces of cubed butternut squash
-1 sweet onion, sliced
-1/2 cup olive oil
-salt, pepper to taste
-cinnamon, and nutmeg, 1 tsp each
-1/2 cup raw pomegranate seeds
-1 cup of baked ham, diced (we used this from a previous dinner-- optional for those who don't eat meat)
1. Pre-heat the oven to 350 F.
2. Place all the ingredients in a baking dish and bake for 45 minutes.
