-2 heads of cauliflower
-A lot of EVOO
-10-15 Sun-dried tomatoes (preferably no sugar added!)
-Red pepper flakes
-Salt and pepper --1 garlic clove
--A tube of tomato paste (ingredient: tomatoes only!)
Preheat your oven to 350 degrees. In a blender add 2 tbsp of tomato paste, 10-15 sun-dried tomatoes, your ideal amount of red pepper flakes, salt, and pepper and 1 garlic clove. Add about 3 tbsp of EVOO or enough that when you blend the mixture it becomes liquidy. After that wash and cut the cauliflower into tiny pieces, laying it on a baking tray sprayed with coconut oil (or whatever non-stick you use). After you've arranged the cauliflower so they aren't on top of each other, evenly pour the tomato liquid onto all of the cauliflower. Then set in the oven for 30-35 minutes or until it lightly browned (I like mine crispy for maximum taste!).
