Today my lunch was super delicious and highly nutritious (wait, which of my meals aren't like that- especially when I am making them?). The meat and veggies filled me up so quickly that I actually didn't get to the avocado, but I included it in my picture anyways.
I went to the farmer's market today after my sprinting workout and of course was hypnotized by the overflowing vegetable selection (I think swiss chard is my new soulmate!). I picked up some swiss chard, beets, kale, carrots, and baby summer squash (green and yellow). When I got home I boiled the chard, beet greens (simply cut them off from the beets and boil the beets separately later), and kale. I then steamed the carrots and am saving my squash for another recipe which I'll post soon. I stuck all these veggies in a huge bowl and dressed it with some macadamia nut oil, sea salt, pepper, oregano, and a tablespoon of coconut butter for a tangy twist. After mixing it all together, I set aside a bowl for myself and prepared the rest of my meal: the protein.
I got a handful of bison meat (umm have you tried bison? It tastes so much better than beef!) and patted it down with ginger, turmeric, cumin, and red pepper flakes. I cooked it in some coconut oil in a frying pan which took all of about 3 minutes and then my lunch was served (if I wasn't so lazy I may have even dressed it with some carrots and onion and red wine as I show here, but whatever!).
I ate in my brightly lit kitchen and felt totally satisfied by the end of my high-fat and veggie-filled (oh, scary!) meal.
