Today my Yiayia made some pasture-raised chicken in tomato sauce! It was delicious (simple recipe here). On the side, I of course had a greek village salad and boiled dandelion greens (a signature greek dish served with olive oil and lemon). It was an easily prepared lunch, but just because it was easy, doesn't mean it wasn't filling!! What'd you cook up for lunch today?
Fish from the Mediterranean Sea is always super fresh. In fact I have never had more fresh fish in my life than when I come to Greece. It is always sad when I come home and know I can't order fish any longer because it just won't be the same. (Thankfully I at least have my salmon!)
Today for lunch I had some fresh fish baked in the oven and drizzled with olive oil and squeezed with lemon, some dandelion greens boiled, and some Greek briami. It was yummy, light, and the perfect hearty meal to eat right before siesta. What did you eat today?
My first day in Greece and my grandparents treat us like royalty. My grandmother had already prepared yemistes, a Greek dish that is absolutely delicious and hard work to make. Basically you take tomatoes and Bell peppers and scoop out the insides, but save them and then take ground meat, white rice, and the tomato and pepper insides and mix it together. Once mixed, you add it back inside the pepper and tomatoes and bake it in the oven. Once finished, you can garnish with parmesan cheese if you like. That was my scrumptious lunch! What was yours?
This was super filling and fresh-- my favorite summer breakfasts. I started it with a cup of spinach, added sliced bell peppers, added about 1/4 sweet onion from the farmer's market, a bunch of broccoli, and chopped fresh green beans. I flavored with Greek olive oil, apple cider vinegar, sea salt and pepper. It is so yummy! If you need more flavor try adding blueberries or macadamia nuts. What's cooking at your place?
Today after my golf tournament I had a delicious lunch. I started it with a good ol' avocado. I never get tired of eating avocado, it is smooth and delicious! Next I grilled a bison burger and drizzled coconut oil on top (yum). Lastly, I had brussel sprouts sauteed in coconut oil (from yesterday). My tummy is fulfilled. What was in your lunch?
Today my lunch was green and fresh! As I said before, I love making salads in the summer with ingredients right out of the fridge because its coolness is refreshing (especially after work).
In the picture above (yes, finally mine!) I had brussel sprouts which I sautéed in coconut oil and then my famous simple salad. The only Thing is, I added some different ingredients to this salad. I put the spinach in, but then I also added raw cauliflower and broccoli, chopped raw green beans, and the usual tbsp of apple cider vinegar and EVOO. I garnished with sea salt and pepper and it's so tasty! (the other day I added fresh tomatoes from our garden-yummy!). This was my lunch today. What was yours?

Here is what I ate for lunch today!
First I warmed up this bone broth I made the other day (recipe here) and put a "persian" kufteh in it. What is that exactly? Well my Dad's friends came over the other week and made it for us. Basically, you will need some 85% protein, 15% fat grass-fed ground meat. Form them into meatballs stuffed with basil and then grab a stainless steel pot 1/4 full of chopped onions. First you need to lightly grill the meatballs. Once that's done, put them inside of the pot on the grill and shake it back and forth to get the full flavor with the onions. Let it sit in the pot on the grill for a couple minutes. Then serve with the onions and Greek yogurt sauce (tzatziki) if you do dairy. Anyways, I just put the meatball part into my bone broth, which really flavored it nicely! Then on the side I made a salad with spinach, red cabbage, raw green beans, cauliflower, broccoli, and an olive oil and apple cider vinaigrette. It was a delicious lunch.
